Meet the Business Owner

Chef Sandy Gendel's training is focused in the organic gourmet and classical Italian styles. Following study at the California Culinary Academy in San Francisco, Gendel returned to Los Angeles to work with chefs Mark Peel and Nancy Silverton in their Campanile kitchen. In 1990, Gendel returned to Northern California to work for Jonathan Waxman at Napa's Table 29. He has also spent time in Alice Waters' kitchen at Chez Panisse. The pinnacle of Gendel's education culminated in Umbria, where he worked under culinary virtuoso, Gianfranco Vissani, at his Ristorante Vissani, one of the finest restaurants in Italy. Gendel returned to Los Angeles in 1993 as the head chef of Mauro Vincentti's Rex, and then opened Porta Via on Canon Drive in Beverly Hills. In 1995, Gendel helped Jonathan Waxman open Nick and Tony's Restaurant in Manhattan. He also created the menu at Dominick's in West Hollywood. In 1998, Gendel opened Pace Restaurant in Los Angeles' Laurel Canyon to critical success.

Specialties

Pace "PAH-chay” is Peace in Italian.  Pace Joint is the younger, more-casual sister to Pace restaurant in Laurel Canyon.  Our love is serving organic, farm-to-table food with ingredients sourced from farmers markets and local farms, when possible, to support our community.
